2 grilled chicken breasts, sliced
1 ripe avocado, diced
1 cup fresh blackberries
Mixed greens (spinach, arugula, or your favorite blend)
1/4 cup chopped walnuts, pistachios or pecans (omit for AIP)
4 eggs (boiled) (omit for AIP)
1 cup cucumber
1/2 cup quinoa
For the Honey Mustard Dressing:
2 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon apple cider vinegar
1/4 cup olive oil
Salt and pepper to taste
Instructions:
