quick and easy Paleo flatbread recipe

This is a great quick, easy, nutritious recipe to make a flatbread! You can make the batter up ahead of time too - I always make extra so that I can store the batter in the fridge and then pull it out and cook it up when I need one!

I use this for breakfasts and lunches, it’s so versatile because you can add anything into it! It is an absolute go- to in my house so give it a whirl and let me know what you think!

The optional herbs added really work well when you want a savoury filling!

Ingredients:

1 cup almond flour

1 cup tapioca starch

1 cup water

Optional* 1/4 tsp oregano, 1/4 tsp thyme, 1/4 tsp garlic powder, salt and pepper to taste

Method:

Mix together the almond flour and tapioca starch, (careful - tapioca is very fine and can go everywhere) and herbs if you are using them. Add in the water and mix together.

Get a frying pan on the stove and make sure it’s nice and hot, pour the batter into the pan so that it creates a 4mm coating and let it cook turning down the heat a little, similarly to a pancake you can see it bubble when it’s starting to cook.

Check the underside and if it’s lightly browned you should be able to flip it over, keep an eye to make sure it doesn’t burn.

Then it’s ready - you can fill it with sausage, spinach, sauerkraut and mayo as I have done here, or other suggestions might be tuna salad and peppers, almond butter and chia jam, scrambled eggs with olives and spinach.

So much versatility to a really easy, quick, healthy, nutritious recipe that has protein, fats and carbohydrates!
